Glass Noodles with Salmon, Lime and Mint

Serves: 4

Ingredients:

  • 200 g (7 oz) glass noodles
  • 10 cherry tomatoes, cubed
  • 500 g (18 oz) skinned, salmon fillets
  • 2 tablespoons chopped peanuts
  • 1 tablespoon chilli sauce (sweet)
  • 1 chopped, avocado
  • tablespoon olive oil
  • 1 finely sliced small red chilli
  • 3 finely sliced small red shallots
  • 1 tablespoon basil
  • 1 tablespoon chopped coriander leaves
  • 1 tablespoon mint
  • 1 lime, sliced

For the Dressing

  • 2 tablespoons Thai fish sauce
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice
  • 2 teaspoons caster sugar
  • 2 tablespoons sweet chilli sauce

Steps:

  1. Place the sweet chilli sauce in a bowl, dip the salmon to coat.
  2. Heat oil in a large frying pan, fry salmon for 2 - 3 minutes until brown. Set aside.
  3. In a bowl with boiling water, soak the noodles for 4 minutes.
  4. Drain well and rinse with cold water.
  5. For the dressing, place all the ingredients in a large bowl. Add the avocado, tomatoes, chilli and shallots. Toss gently to mix.
  6. Add the mint, coriander, basil and the noodles. Toss again until all ingredients are combined.
  7. Divide into 4 serving plates.
  8. Spoon the salmon over noodles. Sprinkle with peanuts and garnish with lime wedges.
  9. Serve.
