Noodles Primavera

Noodles Primavera

Serves: 4

Ingredients:

  • 225 g (8 oz) rice noodles, dried
  • 225 g (8 oz) asparagus, sliced into 5 cm (2 inch) lengths
  • 115 g (4 oz) broccoli florets
  • 3 tablespoons olive oil
  • 1 finely sliced carrot
  • 450 g (16 oz) chopped tomatoes
  • 50 g (2 oz) baby corn cobs
  • 1 seeded red pepper, cut into strips
  • 2 cloves chopped garlic
  • 50 g (2 oz) sugar snap peas
  • 1 bunch of rocket leaves
  • 1 tablespoon fresh ginger, chopped
  • 2 finely chopped spring onions
  • soy sauce
  • freshly ground pepper
  • salt

Steps:

  1. In a bowl with hot water, soak the noodles for 30 minutes.
  2. Drain and rinse. Set aside.
  3. Boil the sliced carrot, broccoli florets, pepper strips, asparagus, sugar snap peas and baby corn cobs in the salted water.
  4. Drain and rinse with cold water. Set aside.
  5. In a frying pan heat the olive oil and add the garlic, onions and ginger. Stir-fry for 30 seconds.
  6. Add the tomatoes and stir-fry for 2 - 3 minutes.
  7. Place the noodles to the pan and stir-fry for 3 minutes.
  8. Toss well to combine with other ingredients. Add the rocket leaves and vegetable slices.
  9. Add soy sauce, salt and pepper to taste.
  10. Remove from heat and transfer to the serving dishes.
  11. Serve.
